Little Chickpea (formerly Little Bean) of Portland, Oregon is the most unique ice cream I’ve ever had. The ice cream is vegan and gluten-free, made from chickpeas, and they use the leftover parts of the chickpeas for making (gluten-free) waffle cones and (gluten-free) cookies, espresso and lattes with chickpea milk.
